Aguachile Boilermaker

  • 1.5 oz Prairie Organic Gin
  • 1.5 oz dry vermouth
  • 1 dash orange bitters
  • Garnish: Lemon twistAguachile mix*
  • 1 Bunch of cilantro
  • 4 cucumbers
  • 2 green apples
  • 1 ginger (thumb size, peeled)
  • 1/2 white onion
  • 12 serrano peppers
  • 1/2 cup lime juice, freshly squeezed
  • 1 qt water
  • Salt to taste

To prepare this trio, chill and serve a shot of the aguachile mix in one small glass. In a second glass, pour a small amount of a preferred light beer. In the third glass, build a mini 50/50 martini by adding gin, dry vermouth, and a dash of orange bitters to a mixing glass, stirring it with ice until cold, and then straining it into a tiny coupe or shot glass. Serve all three glasses together as a trio, allowing the drinker to sip, shoot, or sequence the drinks as desired.

Bartender Technique Notes

*Aguachile Base: Roughly chop the cilantro, cucumber, green apple, ginger, white onion, and serrano peppers. Blend these ingredients in batches with water, then strain the mixture twice to achieve maximum smoothness. Finally, season the strained liquid with fresh lime juice and salt.”
