Fig Leaf Tea Highball

  • 2 oz Prairie Organic Vodka
  • 3/4 oz fig oolong syrup
  • 1/4 pear liqueur
  • 4 oz soda water
  • Garnish rim with dehydrated fig leaf dust

First, lightly brush a portion of the rim of a highball glass with simple syrup, then roll or sprinkle dehydrated fig leaf dust onto the sticky area. Next, combine ingredients into the glass. Fill the glass with ice, and then top it with soda water. Gently stir the contents with a bar spoon to combine everything, and serve the finished drink with a fresh fig slice or a pear fan as a garnish.
Bartender Technique Notes
*Dehydrated Fig Leaf Dust: Take 3 fig leaves, dehydrate at 135–145°F until fully dry and crisp. Then, blitz in a spice grinder to a fine powder. Store in a spice shaker for clean, controllable application
**Fig–Oolong Syrup: In a saucepan, combine: 200 g granulated sugar, 240 mL water, 9 g oolong tea, 5 g fig leaf. Simmer gently for ~4 minutes until aromatic and sugar fully dissolves. Remove from heat and allow to steep until room temperature. Strain out solids and refrigerate
