- 1 1/2 oz Prairie Organic Vodka
- 1 oz pluot juice*
- 1/2 oz lime juice, freshly squeezed
- 3/4 oz simple syrup
- Top soda water
- Pinch of salt
**Garnish: glass dusted with salted sugar made with dehydrated pluot bits, lime zest, sugar, and salt

Prepare a highball glass by lightly brushing the rim with simple syrup, then roll the rim into the salted fruit-sugar mixture. Next, fill the glass with ice. Add the vodka, pluot juice, lime juice, simple syrup, and a pinch of salt. Finally, top the drink with soda water and stir gently to combine all ingredients.
Bartender Technique Notes
*Pluot Juice: Blend pluots (and peaches, if desired) with water; fine-strain to remove solids
**Rim Dust: Dehydrate pluot pulp and lime zest, grind finely, and mix with sugar and salt
