- 1 1/2 oz Prairie Organic Gin
- 3/4 oz aperitivo-style bitter liqueur
- 3/4 oz lemon juice, freshly squeezed
- 1/2 oz honey-chamomile syrup
- Garnish with a Chamomile foam* and a mist of light herbal liqueur spray

Combine ingredients into a cocktail shaker with ice. Shake until the mixture is chilled and lightly aerated. After shaking, double-strain the contents into a chilled coupe glass. Finally, to finish the drink, spoon or pipe chamomile foam across the top of the cocktail, and then finish with a light herbal liqueur spray

*Chamomile foam: Foam may be stabilized using egg white, Versawhip, or another foaming agent and charged in an iSi siphon
