Cucumber Vodka Gimlet
2 oz Prairie Organic Cucumber Flavored Vodka
3 cucumber wheels, thickly sliced
½ oz simple syrup
1 oz lime juice, freshly squeezed
Splash of sparkling water
Mint sprig and cucumber ribbon, optional
Muddle cucumber wheels and simple syrup in the bottom of a glass. Press cucumber ribbon against glass and fill with ice. Combine vodka and lime juice into a cocktail shaker with ice and shake until well chilled. Strain into ice-filled glass and top with sparkling water and garnish with mint sprig.
