Bramble Spritz
- 3/4 oz Prairie Organic Gin
- 1/4 oz Leroux Jeżynówka Polish Blackberry Flavored Brandy
- 1/2 oz Lemon juice
- 1/2 oz Mint syrup*
- Top with sparkling wine

Combine the gin, blackberry brandy, lemon juice, and mint syrup into a cocktail shaker with ice. Shake vigorously to chill, then strain into a collins glass filled with fresh ice. Top with sparkling wine and gently stir from the bottom to incorporate. Garnish with a fresh sprig of mint and a few fresh blackberries.
Bartender Technique Notes
*Mint syrup: dissolve 1 cup sugar in 1 cup boiling water, remove from heat, and steep 1 cup fresh mint leaves covered for 15 minutes. Strain into a jar, pressing the leaves for flavor, and cool before refrigerating.
